PHYSICOCHEMICAL AND MICROBIOLOGICAL EVALUATION OF MILK IN THE MUNICIPALITY OF NOVA GLÓRIA - GO

Milk is a nutritionally rich food and widely present on Brazilian tables. The per capita consumption of milk in Brazil is 166 liters/inhabitant/year and milk production in Brazil in 2017 was 33.5 billion liters. Several factors can alter the quality of milk and most of these factors are related to fraudulent actions, either by adding foreign substances or removing compounds, as well as poor sanitary conditions during milking. Knowing this, the objective was to evaluate the physical-chemical and microbiological quality of milk in Nova Glória - GO. Milk collection was carried out in four rural properties located in the municipality of Nova Glória - GO and the samples were processed in the Instrumental and Microbiology laboratory of the IF Goiano - Campus Ceres. ANOVA of the data set was performed and the means were compared by Tukey's test (5%). The physical-chemical parameters evaluated are within the expected range, with slight acidification of the samples resulting from inadequate storage after collection. Protein centesimal composition is lower than expected for rural property three. All samples were outside the legal standards for consumption because they had a high concentration of total and thermotolerant coliforms.
