EVALUATION OF PHYSICAL CHEMICAL AND MICROBIOLOGICAL QUALITY CONTROL DATA OF RAW MILK

Abstract

The objective of this work was to evaluate the physical-chemical and microbiological quality of fresh cow's milk in the municipality of Uruana-GO. Three milk producers were selected and the physicochemical properties (fat, protein, lactose, Defatted Dry Extract - DDE and Total Dry Extract -TDE) and microbiological properties (Somatic Cell Count - SCC and Total Bacterial Count - TBC) were evaluated. of fresh milk in the period from 2019 to 2021. The physical-chemical and microbiological analysis data were obtained through a selection of information from the quality control reports of Laticínio El Shaday EIRELI. The data were tabulated in an Excel spreadsheet and statistical analysis was performed using analysis of variance (ANOVA) and Tukey test at 5% significance for comparison and verification of deviations between means. The results of the physical-chemical analysis indicated that, in the three years evaluated in the study, the variations in fat, protein, lactose, EST and ESD were minimal and were within the values ​​recommended by Brazilian legislation. For microbiological analysis, all milk samples did not meet the levels of SCC and TBC established by Brazilian legislation, being above 300 thousand cells/mL and 300 thousand CFU/mL, respectively. Overall, there was a trend in the progressive decrease and emphasis on P3 products with a reduction in TBC of almost 80% throughout the study. The monitoring and technical assistance of milk producers, especially those with lower technological level, must be a constant practice in order to achieve a better quality product that meets Brazilian legislation.

Graduated in Agricultural Sciences from the Federal Rural University of Rio de Janeiro (1993), Master's degree in Food Science and Technology from the Federal Rural University of Rio de Janeiro (2000) and PhD in Nuclear Energy in Agriculture (Esalq) from the University of São Paulo (2008). He is currently a Full Professor at the Federal Institute Goiano Campus Ceres, since 1995. Professor and advisor at Graduate Program Lato sensu in Production and Use of Animal Feed for Zootechnical Interest. Has experience in Food Science and Technology, focusing on Food Science and Technology, acting on the following subjects: functional foods, sensory analysis, antioxidants, waste utilization and resistant starch.
